Maybe not everyone knows… chicory
There is a group of vegetables that belong to the chicory group (Family Astralacee, subfamily Cichorioideae). We eat them in different seasons and in different regions but grow all with equal ease even in poor soil.
It is a very strong plant that can survive the winter gelature and trim again after losing all the leaves. Chicory, in addition to being used in cooking, is used in herbal medicine and roots you get a substitute for coffee.
